General Description of Position:

The Assistant General Manager/Chef will, in conjunction with the General Manager, provide managerial support for the daily operations of Union Station by JP’s, a full-service restaurant concept, with primary responsibilities for the quality of food and services provided, staffing, and staff training to ensure an exemplary guest service as well as working with clients to coordinate special events.  The successful candidate will possess an extraordinary skill set, extensive culinary experience, strong leadership skills and the ability work flexible hours, including occasional evenings and week-ends.

Information about the Department:

Housing and Dining Services is a large, self-operated auxiliary department serving more than 6,000 students that call the K-State campus home.  This "home away from home" meets more than the basic needs of students living with us — we provide affordable, safe and engaging accommodations for our residents, while finding unique ways to support them in their academic pursuits.  The department is comprised of four functional areas:  dining services; facilities management; student living; and administrative services.

As part of the department’s commitment to students, retail offerings will expand to include Union Station by JP’s (a full service restaurant), Fast Track (fast casual concept), and Union Station by JP’s on-site provided catering services.  These new venues will complement services currently provided to the campus and local community:   JP’s Sports Grill, Cornerstone Coffee & Bakery, Quik Cats Convenience Stores, Overtime Grill at Kramer, and The Bakery at Derby.

The Successful Candidate will:

Specific responsibilities include, but are not limited to:

  • Directs all front-of-the-house activities for Union Station by JP's, including training, supervision of staff in the service of food and beverages including beer service, sanitation, customer service, equipment operation and maintenance.  Develops front-of-the house staffing guidelines.  Provides guidance in menu development for Union Station by JP’s and Fast Track.
  • Coordinates catering functions in conjunction with General Manager and kitchen staff.
  • Develops creative, trend setting, standardized recipes.  Oversees an effective system for quality control in food preparation, food presentation, and food quality.
  • Receives and resolves in a timely manner all customer complaints concerning the service of food and beverages.
  • Develops and effectively implements various operational manuals and programs in support of employee training, equipment operations and maintenance.
  • Promotes positive morale among staff and supports activities and interactions that provide a “guest first” service culture.
  • In collaboration with General Manager and other departmental staff, develops Point of Sale (POS) procedures, trains staff on system and oversees use of POS system. Analyzes revenue and expenditures.  Updates and maintains POS inventory, sets and maintains par levels.  Assures security of food and beverage inventory.  Oversees and ensures adherence to cash handling and reporting procedures.
  • Provides leadership in the development of creative marketing and special promotions for the Union restaurants and catering. 

Required Minimum Qualifications:

Requires a bachelor's degree and three to five years of relevant experience. This position may use an educational equivalency as determined relevant by a hiring manager.

Preferred Qualifications:

  • Two or more years of progressive professional leadership in the hospitality field; prior experience as General Manager, Assistant Manager, Executive Chef or Chef de Cuisine in charge of food production and/or service in a full-service quality food service operation.
  • Experience working in a university volume foodservice setting or other large volume operation with demonstrated ability to coordinate food production, menu/recipe development and design.
  • Bachelor’s degree in Hospitality Management or related field.
  • Comprehensive management skills to include knowledge of cost controls, procurement and specification writing, strong human resources and team building skills, knowledge of materials, methods, equipment, techniques and terminology used in a large scale foodservice operation.
  • Experience interacting with patrons and the ability to build and maintain strong relationships with customers.
  • Outstanding communication skills including interpersonal communication, writing, and public speaking, and presenting, teaching and instruction.
  • Knowledge of state and federal laws and regulations relating to the operation of a food service operation.
  • Creative, energetic, innovative and self-motivated with a strong commitment to teamwork and customer service.

Other Requirements:

Must be 21 years of age. ServSafe certification within 60 days of employment. This position requires the ability to work variable hours including evening and week-ends.

Salary Range/ Pay Rate:

$41,258 - $63,950

Please note: the minimum salary for this position is $41,258. Actual salary will be determined based on the candidate's experience, education, internal equity and departmental funding. Salary offers are typically made between the minimum and midpoint of the salary range. The range indicated includes both the typical hiring range and potential future progression.
